03/31/11 Using yeast cake from primary fermenter of Newcastle Clone from 03/27/11 (Safale S-04 Dry English Ale Yeast) 2 cups RO water 1/3 cup light DME 1/2 tsp. yeast nutrient Prepare starter solution: Boil water, yeast nutrient, and DME in pan. Cover, remove from heat, and pour into sanitized flask. Cap with airlock. Obtain yeast: After decanting wort from primary to secondary fermenter, a nice smooth yeast cake remains. Add just enough reverse-osmosis water and shake the carboy to mix, then pour the yeast into a sanitized flask. Add yeast to solution: When flask is cool enough to hold, add 100mL of yeast-water. Recover and place in cupboard overnight. I made two starters, one for splitting and one for mead.
