1 gallon water ~ 1lb. wildflower honey ~ 7 cups fresh loquat juice 04-02-07 Start with 1 gallon water in the pot. Heat on high to rolling boil. Turn off heat. When boiling stops, stir in honey and loquat juice with sanitized spoon. Covered and let cool in sink with ice. When it hit around 100, poured into bucket. Added vial of California ale yeast from batch 4 secondary fermenter. Mixed with sanitized spoon. Decanted into jug and capped with airlock. starting gravity: 1.042 05-23-07 Sampled much. Not as good as M1, kind of sour due to the loquat. Decanted into a fresh Rossi jug. final gravity: 1.010
