1 gallon water 1.3lbs wildflower honey 01-31-07 Start with 1 gallon water in the pot. Heat on high to rolling boil. Turn off heat. When boiling stops, stir in honey with sanitized spoon. Covered and let cool for a while. Got impatient and put in sink with small amount of ice. Sat out for a long time, eventually got down to about 80. Poured into bucket. Added 1/2 cup California ale yeast starter. Mixed with sanitized spoon. Decanted into jug and capped with airlock. starting gravity: 1.046 02-22-07 Tasted the mead. Too sweet but fruity and delicous. Noticable carbonation when swished around. 03-01-07 Tasted it again. Pretty much just like before, no noticable change. Fermentation may have stopped. 03-12-07 Tasted again. Slightly bubblier, still too sweet. Agreed by all to be delicious. 04-12-07 Bottled. Added 1/8 of a priming sugar mixture with 1.5 cups corn sugar, 2 cups water, boiled. And half a teaspoon of Yeast Energizer. Final gravity: 1.023
