6.6Lbs Dark malt syrup 1Lb. Dark dry malt 12oz. Roast barley 8oz. Barley flakes 1oz. Bullion hops .5oz Kent Golding hops Irish yeast (white labs) 05-04-07 Start with 3 gallons distilled water in the brewpot Raise temperature to 150¡f Steep roast barley and barley flakes at 150¡f for 30 minutes Turn off heat (to avoid burning) and add dark malt syrup. Forgot the dark dry malt. Stir to mix. Turn heat back on and raise to boiling. Add 1oz. bullion hops at beginning of boil and cover. Boil for 55min, add Kent Golding hops and wort chiller. Boil for 5 more minutes. Cool with wort chiller. Minor accident due to hose not being fully inserted... hopefully no hose water went into the wort. When cool, decant into plastic tub. Top up to 5gal with distilled water. Pour through filtered funnel into carboy. Stop halfway through and add Yeast Starter 4B. Cap with airlock. O.G. 1.059 05-10-07 Decanted to 5 gallon carboy through racking cane, no filter. Specific gravity: 1.021 06-01-07 Boiled 2 cups water with 1.5 cups DME for a couple minutes. Put lid on and set aside. Decanted into bucket (stopping to sample for hydrometer reading), added DME mixture, and bottled. F.G. 1.021 06-22-07 Sampled a bottle. Good but overly nutty and bitter. Hopefully will improve with age like II.
