10lbs pale malt syrup 1 to 2 lbs candi sugar (oops forgot it!) 6oz. caramel 40L 6oz. caramel 20L .5oz. Nugget (60min) .5oz. Willamette (1min) .5oz. Cascade (1min) 01-31-07 Start with 3 gallons distilled water in the brewpot Raise temperature to 150¡f Steep caramel grains at 150¡f for 30 minutes Turn off heat (to avoid burning) and add malt syrup. Stir to mix. Turn heat back on and raise to boiling. Add .5 oz. nugget hops at beginning of boil and cover. Boil for 40min, add the wort chiller. Boil 19 more minutes, add Willamette and Cascade hops. Boil for 1 more minute. Cool with wort chiller. When cool, decant into plastic tub. Top up to 5gal with distilled water. Mix with spoon. Decant 1/5 quart for use in Krausening 1/5 of recipe and retain. Add yeast and mix. Decant into primary fermenter (6.5gallon carboy). starting gravity: 1.073 02-14-07 Siphoned into secondary fermenter (5 gal carboy) 02-22-07 Siphoned into graduated bucket. Saved yeast in 3 test tubes and one empty tonic water bottle. Stirred with spoon and separated into 5 parts (by pouring into Rossi jugs). Added different Krausening/priming agents to each part and bottled. Calculations: Krausen: The Homebrewer's Recipe Guide recommends .5 quarts of Krausen for 5 gallons of a beer with OG 1.070. .5 quarts = 1 pint = 2 cups = 16 oz. 16 oz / 5 gallons = 3.2 oz per gallon Dry malt extract: Doc's Cellar recommends 1.25 cups DME for 5 gallons. 1.25 / 5 = .25 cups DME Honey: Doc's Cellar recommends 3/4 cup corn sugar for 5 gallons. Assume cane sugar would be equivalent in volume to corn sugar. From the nutrition facts on the packages, honey has 4/3 as much sugar as an equal volume of cane sugar. Quantity of sugar * 3/4 = quantity of honey Quantity of honey per gallon = .75 cups / 5 gallons * 3/4 = .1125 cups = 27mL Batches: A - Dry malt extract (.25 cups) B - Dry malt extract (.5 cups) C - Honey (27mL) D - Krausen (.5 cups) E - Krausen (almost 1 cup) Finishing gravity: 1.021 We did not prime with corn sugar because we were out. Oops. We deliberately over-krausened batches B and E. Hopefully they won't explode. We'll see. 03-05-07 C - Pleasant honey flavor, under-carbonated. Would be very good if it were bubbly. A - Severely undercarbonated. Tastes more like beer than C. B - Good flavor, more carbonated than A. Would be very good if bubbly. D - Least carbonated so far. E - Sweeter and more carbonated than D. Making Paul sick. 03-12-07 A - Still a bit sweet but not as bad as last time. Slightly more carbonated but still no head.
