6.6Lbs Dark malt syrup ( brand) 1Lb. Dark dry malt 12oz. Roast barley 12oz. Barley flakes 1oz. Chinook hops (substitute for unavailable Bullion) .5oz Kent Golding hops (very old) Irish yeast (white labs - starter Y11) 07/01/08 Start with 3 gallons distilled water in the brewpot Raise temperature to 150¡f Steep roast barley and barley flakes at 150¡f for 30 minutes Turn off heat (to avoid burning) and add dark malt syrup. Add dark dry malt. Stir to mix. Turn heat back on and raise to boiling. Add 1oz. chinook hops 15 minutes into boil and cover. Boil for 55min, add Kent Golding hops and wort chiller. Boil for 5 more minutes. Cool with wort chiller. Decant into plastic tub. Top up to 5gal with distilled water. Pour through filtered funnel into carboy. Stop halfway through and add Yeast Starter 11.
