7Lbs Wheat malt syrup 6oz. Flaked wheat 1oz. hallertau 1.5oz. ground coriander 1/4 tsp. ground cumin Peels of two oranges, ground 5oz. fresh ginger, ground Wit Yeast (white labs) 12-07-07 Start with 3 gallons distilled water in the brewpot Raise temperature to 150¡f Steep flaked wheat at 150¡f for 30 minutes Turn off heat (to avoid burning) and add wheat malt syrup. Stir to mix. Turn heat back on and raise to boiling. Boil 15 minutes Add 1oz. hallertau hops and cover. Boil for 30min. Add 1.5 oz. ground coriander and 1/4tsp. ground cumin. Boil 10min. Add wort chiller, orange peel, and ginger. Boil 5min. Cool with wort chiller. When cool, decant into plastic tub. Top up to 5gal with distilled water. Pour through filtered funnel into carboy. Take gravity reading. Stop halfway through and add Yeast Starter Y10. Cap with airlock. O.G. 1.058 12-28-07 Decanted to secondary carboy through filter. Had problems with foaming head. Gravity: 1.020 04-26-08 Boiled 2 cups water with 1 cup corn sugar and cooled. Decanted wort from carboy to sanitized bucket. Labeled as batch 13 for some reason. 5-30-08 Carl tried a bottle, says it's good but gingery.
